Roots Chicken Shak is the home of Chef Tiffany Derry’s famous duck-fat fried chicken. Our menu was inspired by Tiffany’s Southern upbringing and utilizes locally sourced, fresh ingredients prepared with proprietary methods and spices.
We serve our duck fat-fried chicken in many forms, from wings and tenders to sandwiches and atop salads—we even fry our fries in duck fat to deliver exceptional flavor.

Our Story
Roots Chicken Shak is owned and operated by T2D Concepts, Chef Tiffany Derry and Tom Foley’s purpose driven-hospitality group. In order to drive economic opportunity for all, Tiffany and Tom strive to ensure everyone is invited to the table and has equal opportunity to thrive. Grounded in strategic business analysis, the pair is developing an innovative operations and strategic funding model with the hope to expand the Roots footprint, deliver consistent chef-driven food, and provide incentives and opportunities for women and people of color to operate their own franchise. With an efficient footprint, streamlined menu, elimination of food waste, and prioritization of creating opportunity for minority ownership, Roots presents a scalable restaurant concept that creates a great dining experience and catalyzes social justice.
